Established in the 1840s, the Albion Hotel in Cootamundra has played a pivotal role in welcoming newcomers and providing a reliable and safe watering hole for locals alike.
In 2022, the hotel was closed for a complete renovation that lasted eight months.
As of this year, the latest addition to the hotel will see the opening of a new à la carte dining experience, The Stables on Parker, opening on 30 April 2026.
Following a successful soft launch by the team, Venue Manager Jeremy Taylor, says it will be an exciting addition for the community to come together and experience the very best of what the region has to offer.
“All products will be sourced from the Riverina, as best as we can, and will showcase the pinnacle of produce from the region,” he says of their new menu.
Opening from Thursday to Friday for dinners, and Saturday to Sunday for lunches and dinners, Jeremy says they are excited to showcase the very best the Riverina has to offer in their newly refurbished premises.
As Jeremy says, “This is not just a restaurant opening, but a reintroduction of the space — one that honours its past while delivering a distinctly elevated dining experience”.
Opening just in time for Mother’s Day, Jeremy says they will be hosting a special Mother’s Day Set Luncheon – their first big event to be hosted in the new restaurant.
Soon to be offering seasonal dishes, it took the Albion Hotel 12 months to get to where it is now.
“For us, it’s about lifting what’s available locally — creating a space where people can enjoy something a bit more refined, without losing that country feel,” says Jeremy.
“You shouldn’t have to drive hours for a good night out — we wanted to create something special that locals can call their own.”
The Stables and their Function Area will remain available for private bookings on request.
Visitors will get their taste buds salivating over Honey Glazed Sticky Lamb Ribs, House Made Damper, Slow Braised Beef Cheek, Riverina Lamb Backstrap, Wild Mushroom and Native Thyme Pappardelle and Bush Honey Panna Cotta (among other delectable looking items).
